Mary and I take turns cooking for each other, and Tuesdays and Thursdays are my days to cook. So on Tuesday I wanted to make spaghetti and meatballs. I didn't have a recipe in my cookbooks, so I looked online. I couldn't find one that looked good that I had all the right stuff for, so I used them all to make up my own. The result: The BEST meatballs I have ever had! They were SO good. So I thought I would share my recipe.
1 lb of ground turkey (We really like turkey in our apartment)
1 cup bread crumbs
1 egg
1/2 cup grated parmesan cheese
1/2 cup olive oil ( I kind of put this in by accident. I was supposed to put it in the pan to fry them, but accidentally put it in the bowl, so I am not sure how much it added to the tast, but who knows? maybe it helped?)
1/4 cup water
3/4 tsp basil
3/4 tsp oregano
First of all, I made the bread curmbs by putting 4 thin slices of french bread in the oven at 300 degrees for 20 minutes and then rolling over them with a glass, but a food processor would be easier.
Next, combine all ingredients in a bowl and mix well. Then, form into balls and fry in olive oil over medium high heat until dark brown and slightly crispy. (Well, actually I got lazy while flipping them and they turned more into meat mush with several ball like lumps. But they would be better in ball form I think.) Next, pour maranara sauce into the pan, reduce heat to medium, and cook for about 15 more minutes. Delicious!
